Heat cooking oil and ghee in a large pot. Add bay leaves, cinnamon, cloves, and cardamom. Sauté for a minute until fragrant.
Add chopped onion and fry until golden brown.
Add chopped tomato, curd, ginger-garlic paste, green chilies, chopped coriander, mint, and ORISTOR Biryani Masala. Cook for 2 minutes.
Pour in 1 cup of water and let it boil for 5 minutes.
Add salt to taste, then add the chicken pieces. Cook on high flame for 5 minutes, then reduce to low flame and simmer for 12–15 minutes.
Add 2 cups of water and bring it to a boil again.
Add the washed rice and cook on high flame for 10 minutes.
Once boiling, reduce the flame to simmer, add 1 tbsp ghee, and cook for an additional 45 minutes with the pot tightly covered.
Once cooked, allow it to rest for a few minutes before serving.
